Even though I haven't used it for a server or development, I'll also recommend Arch. It's quite stable as long as you update regularly, and the fact that they make few changes to packages from upstream is always a plus.

edevore, you should definitely bring up your issue on the Arch forums/mailing list/IRC they'll be glad to help.

I don't think its an issue, I really didn't do the keyboard part...

I left the keyboard part as default and did not test my keyboard input before the password was set, so maybe Essen is right about why my password quit working after one successful reboot.
